The title to this post should have read 'Cupcapers - Hummingbird Bakery Lemon Meringue Cupcakes, but I was tired and the recipe called for concentration so I decided to make a version that I came up with a couple of years ago and therefore required no real thought on my part.
The recipe comprises of a lemon sponge which once baked into cupcakes is hollowed out with some lemon curd dropped into the craters and a meringue mix smeared onto the top of each cupcake which is then grilled for a couple of minutes to brown off the meringue
Love the light and fluffy meringue with the surprise sharpness of the lemon curd
Surely too nice to be naughty?!
